I've never been here but it may serve as another option for some snow.
Wolf Ridge is about 1 hour or 60 miles North East from Maggie Valley and is located about 30 miles North of Asheville.
Elevation: 4,600 at peek

Beech Mountain
Beech Mountain is 2.5 hours away and 112 miles.
Beech is at a slightly higer elevation than Cataloochee, but only by 94 feet.
Beech does have more trails and does seem to hold snow a bit longer than Cataloochee and it may be worth the drive, but consider that it's 4 hours of driving round trip. Elevation is what makes for better snow conditions. When it's warm out, both Cataloochee and Beech will both have lots of grass…

If you just want to "see snow", you might consider adding Beech to a trip to Asheville, but note that 60 of the 80 miles will be climbing mountains.
Beech Mountain is also near Sugar Mountain Ski Resort, which sits at a lower elevation (5,236 feet at the peek) They tend to run out of snow early.
